Valentine’s Day Crunchy Cookies

It’s Valentines day!.. well almost, we have 3 days left.

How do you feel about Valentines Day?,

because I love it. All the shops are filled with chocolates and rose petals and so much love is in the air. Valentines day for me is all about celebrating in love in any way that I can, with my partner, with my family and friends. Even though the whole day is meant to be dedicated to showing love, I do this all year round anyway. 

Of course, I decided to get out my whisk and my mixing bowl and whip up something nice. Chocolate Chip Crunchy Cookies, decorated in true Valentine’s Day style.

– LET’S GET STARTED –

Ingredients that you will need for the cookies

200g plain flour

120g unsalted butter

165g caster sugar

1 tsp of fine salt

1 tsp bicarbonate of soda

1 large egg, room temp

2 tsp vanilla extract

200g chocolate chips

Ingredients that you will need for the icing 

Ready to roll red icing

Icing Sugar

Sprinkles

Icing gels

Strawberry laces

Equipment that you will need

Scales

Mixing Bowl

Spatula

Baking Tray

Baking parchment

Cooling wrack

Love heart cookie cutters

Method:

Step one: Preheat oven to 180oc and line two baking tins with baking parchment.

Step two: Beat the butter and sugar in a mixing bowl until creamy and then add in the egg and vanilla extract and mix together. Sift and fold through the flour, bicarbonate of soda and salt. Then mix together then add in the chocolate chips.

Step three: The dough should start to form and once done so grab pieces of the dough and flatten it out. Grab your heart shaped cookie cutters and cut out the dough, then place it on the lined tray. Repeat this until all the dough has gone and you have different sized love heart cookies. Then place them in the oven for about 12 minutes, they should be golden brown.

Step four: Once they are ready to come out place them on a cooling rack. If they have love their love heart shape in the oven you can quickly cut them out again with the heart shaped cutters. Make sure to do this once they are hot, once cooled down they will be too hard. Then leave them to cool.

Step five: While they are cooling down, roll out the ready to roll red icing and cut out a couple of love hearts. Then get a pot and put in some icing sugar and some water, this is going to be used to glue the icing to the cookies. Get the red heart icing and place some icing sugar on the bottom, then stick it directly to the cookie. Then using a knife carve out little lines on the heart. This is one way that I decorated my cookies, but you can decorate them any way you like using the ingredients for the decorations above. Once all decorated,
