Nutella and Strawberry cupcakes

After I put up a poll on my Instagram the other month asking what cupcakes I should make, the majority of the votes went to Nutella and Strawberry cupcakes, therefore.. I MADE SOME!
They were super easy to make, and they were probably the best cupcakes I have ever made before! they were so tasty, in the process of baking them if felt so sick because I kept eating the chocolate!
Anyway, I hope you can bake with me!

– LET’S GET STARTED –

Ingredients that you will need for chocolate sponge (12)

4 tbsp (boiling ) water

40g cocoa powder

3 eggs

180g (unsalted)

165g Unrefined golden sugar

115g self raising flour

1 tsp baking powder

Equipment that you will need

Scales

Mixing Bowl

spatula

cupcake cakes & cupcake tins

Spoon

Piping bag

Cooling wrack

Method:
Step one: line a cake tin with the cases. Preheat the oven to 200oc / 400oF / Gas mark 6
Step two: sift the cocoa powder into a bowl and then pour in the boiling water and mix together with a spoon to create a thick spreadable paste. After you get to this stage, add in the remaining ingredients and mix together with the spatula. It is better if you have an electric whisk but if you don’t you will really have to mix it together, you don’t want the butter to be clumpy.
Step three: after this, divide the mixture equally into the cupcake cases and put them in the oven for around 10-15 minutes. They need to be well risen and springy when you touch them. Poke them with a cocktail stick and if it comes out dry, they are done. Place them on a wire rack.

Ingredients that you will need for chocolate icing

160g of Nutella

60g salted butter

3 tbsp whole milk

250g icing sugar

Strawberries

Method:
Step one: sift the cocoa powder into a bowl and then melt the butter on the hob and pour it into the same bowl. Then add the Nutella in the icing sugar, bit by bit, mixing it as you add. Keep mixing until glossy and thick but easy to spread. If it is too thick add in more milk and if it is too watery add in more icing sugar.
Step two: get a piping bag and put the icing into the bag and pipe it onto the cupcakes, making sure they are cold before piping. Once done, put them in the fridge for about 10 minutes to harden up the icing because the Nutella will make the icing watery. Once they are abit harder, they are ready to be served!!

    Omg I’ve never actually used Nutella in a baking recipe yet but you’ve totally convinced me to!! These look delicious x
