EASTER GOODIES

B A K I N G

Hey everyone and welcome back to another post. I hope you are all having an amazing Easter weekend and eating a lot of chocolate.
Last year on my blog, I made some easter chocolate nests and this year I wanted to UP MY GAME! therefore I have made some chocolate cupcakes, with nests on top and a mini egg chocolate mini loaf. THERE ARE ALOT OF MINI EGGS! < my fave chocolate.

L E T ‘ S  G E T  S T A R T E D 

CHOCOLATE NEST CUPCAKES (serves 12)

Ingredients:

4 tablespoon of boiling water

40g Cocoa powder

3 eggs

175g Butter, unsalted and softened

160g caster sugar

115g self raising flour

1 tablespoon of baking powder

2 1/2 of shredded wheat pieces.

Cadbury chocolate bars, the 100% ones, 2 of these

Chocolate icing

Mini eggs / decorations

 

Equipment:

Scales

mixing bowl

spatula

cup cake tins

cup cake cases

wire rack

Sieve

Method:
Step one: Pre heat the oven to 180oc and line the cupcake tins with the cases. Then sift the cocoa powder into a large mixing bowl and then pour in the hot water. Mix both of these together until they turn into a thick chocolate paste. Then add the remaining cake ingredients in and mix together until well combined.
Step two: After you have done this, divide the mixture equally into 12 cupcake cases and put in the oven for about 12-15 minutes. Keep checking on them while they are in the oven. If it comes to 15 minutes and you poke them with a cocktail stick and you don’t think they are done, put them in for a couple more minutes.
Step three: Take them out of the oven when they are springy to touch and well risen. Take them CAREFULLY out of the cupcake tins and place them on the wire rack. (I like to leave mine near the backdoor, with the door open so they cool down quicker (I am very impatient)
Step four: While they are cooling down grab a mixing bowl, a pan and some hot water. Place some water in the pan and put the mixing bowl over it (making sure that the water doesn’t touch the bottom of the mixing bowl.) Break up the chocolate and place it in the bowl. Let the chocolate melt and continue to mix it until all melted. Then take the bowl off the pan and add in the shredded wheat, mixing it all together until all of the shredded wheat is covered.
Step five: The cupcakes should be cool by now, and now you can decorate them. Add some chocolate icing to the top of the cupcakes, just a dollop on top. This is going to stop the shredded wheat from falling off of them and will just give it something to stick to. ALSO WHO DOESN’T WANT MORE CHOCOLATE? Then let the icing set for a couple of mins, even put them in the fridge for 10 minutes or so. Then place the chocolate shredded wheat on top of the cupcakes and add the mini eggs on top. THEY ARE DONE 🙂

 M I N I  E G G  C H O C  L O A F

 

Ingredients:

125g softened butter

125g caster sugar

3 eggs

130g self raising flour

1/2 tablespoon baking powder

100ml whole milk

4 tablespoons of cocoa powder

A handful of mini eggs

Chocolate icing

2 1/2 of shredded wheat pieces.

Cadbury chocolate bars, the 100% ones, 2 of these

 
 

Equipment:

Scales

mixing bowl

spatula

cup cake tins

cup cake cases

wire rack

Sieve

 
 
Method:
Step one: Preheat oven to 180oc. Grease and line a loaf tin.
Step two: Bat the butter and sugar together until light and fluffy then beat in the eggs, flour baking powder, milk and cocoa. Then pour half into the tin and drop in the mini eggs, then add more of the mixture so the mini eggs are covered.
Step three: Bake for 20-22 minutes until well risen and a skewer poked in the centre comes out clean.
Step four: Take out the oven once done and poke holes in the top of the cake (this will help it to cool down)
Step four: While they are cooling down grab a mixing bowl, a pan and some hot water. Place some water in the pan and put the mixing bowl over it (making sure that the water doesn’t touch the bottom of the mixing bowl.) Break up the chocolate and place it in the bowl. Let the chocolate melt and continue to mix it until all melted. Then take the bowl off the pan and add in the shredded wheat, mixing it all together until all of the shredded wheat is covered.
Step five: It should be cool now, so you can decorate it. Add some nests on top of the cake and drizzle over some chocolate icing. Once finished decorating place in the fridge for 10 mins to let everything harden and set then remove from fridge and they are done.  THEY ARE DONE TOO 🙂
